Homemade Chicken Fettuccine Alfredo

This homemade chicken fettuccine alfredo is one of my favorite recipes using our farm fresh chicken breast. Skillet fried chicken breast served over creamy alfredo sauce and noodles. This recipe is easy to make and great when topped with garden fresh cherry tomatoes and herbs. A tasteful homemade recipe using fresh from the farm ingredients.

Homemade Chicken Fettuccine Alfredo

Ingredients

  • 2 chicken breast
  • 8 oz. fettuccine noodles
  • 3 tbsp frying oil (notes)
  • 4 tbsp butter
  • 3 cloves garlic, minced
  • 1 1/2 cup heavy whipping cream
  • 2 cups grated parmesan cheese

Seasonings

  • 2 tsp Itailian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Start by boiling water to cook the noodles according to the instructions on the box.
  2. Prep the chicken for frying, season both sides and then cut into strips.
  3. Heat up frying oil in a large skillet on the stove. The oil should be just starting to sizzle and lightly smoke.
  4. Add in the chicken strips making sure the oil isn't to hot. You want it to sizzle but not to abruptly. Cook for 4-6 minutes on each side. Check for doneness with a meat thermometer (note).
  5. Remove the cooked chicken from the skillet and scrap any excess frying drippings from the pan.
  6. On medium heat add in the butter and garlic. Let the butter melt and then add in the heavy cream. Stir until it reaches a gentle bubble.
  7. Add in parmesan cheese and stir until it has melted.
  8. Toss in the chicken and noodles. Top with fresh cherry tomatoes and serve garnished with fresh herbs (optional). Enjoy!

How to pan fry the chicken breast

Start by seasoning the chicken breast with salt, pepper, and Italian seasoning. While the frying oil is heating up, cut the chicken into strips.

When your oil is just starting to bubble and slightly smoke it is time to add the chicken breast. Make sure your oil doesn't get to hot or you will burn the chicken. It should be just lightly sizzling in the pan as it is frying.

Fry on medium heat for about four to six minutes on each side. Check the chicken with a meat thermometer to make sure it is thoroughly cooked. Chicken is cooked at an internal temperature of 165 degrees.

How to make Homemade Chicken Fettuccine Alfredo Sauce

You can make the sauce in the same skillet that you used to fry the chicken. Deglaze the pan by scraping any excess frying drippings from the pan. Add in some butter and garlic. Let the butter melt and then add in heavy cream. Whisk the heavy cream until it begins to gently bubble. Add in the grated parmesan cheese and mix it all together until it is has melted.

Toss in the noodles and the chicken until it is evenly combined. Add fresh cherry tomatoes for serving. Garnish with fresh garden herbs if you have any on hand.
